Karens Corner- Simple and Delicious Tailgating Recipe

Avocado and Black Bean SalsaEveryone knows what it means when the temperature starts to cool, it’s the beginning of tailgating season. At The Oaks we love tailgating just as much as everyone else! With the arrival of tailgating season our chef has had many questions for some good tailgating recipes. We have the perfect easy recipe that is sure to be a crowd pleaser!

Chef Kevin recommends Avocado and Black Bean Salsa for a easy tailgating treat. The ingredients for this simple recipe include:

1 (15oz) can black beans rinse and drain

1 small can whole kernel corn drained

4 tomatoes diced

1 small red pepper diced

1 jalapeno seeded and minced

1/3-cup fresh cilantro

¼ cup diced red onion

¼ cup fresh lime juice

2 tablespoon red wine vinegar

2 avocados diced

Salt and pepper to taste

The ingredient list might look daunting, but have no fear! The construction of the salsa is extremely easy. You start by putting all the ingredients, except the avocados, in bowl. Mix all of these really well. Then you gently fold the avocados into the mix. Make sure to do these gently so that the avocados do not break up. Next you cover the mixture and place it in the refrigerator for 2 hours, or if you make it early you can leave it overnight.

When you remove it your salsa is ready to serve! Chef Kevin suggests serving it with pita chips; however, any chip will work.
